Makes 6 to 8 servings

INGREDIENTS:

Mashed potatoes:

-4 large potatoes

-2 Tablespoon vegan margarine

-3 Tablespoon Cashew milk

-1 Teaspoon sea salt

 
INSTRUCTIONS:
1. Cut the potatoes into cubes

2. Boil for about 10-15 minutes

3. Drain & crush by adding the other ingredients

 

Base:

-2 tablespoon olive oil

-1/2 cup Spanish onion

-1 roasted seitan CLASSICO, chopped

-2.5 cups sliced cremini mushrooms

-1/4 Tablespoon paprika

-1/2 cup garlic powder

-2 cups frozen corn (thawed)

-1 cup carrots cut into small cubes

-1/4 cup vegetable broth

-Saffron (garnish)

-Oregano fresh (garnish)

 
INSTRUCTIONS:
1. Heat the oil over medium-high heat in a large skillet

2. Fry the onion in the oil for 2-3 minutes over medium heat

3. Add the mushrooms and cook for 2 minutes

4. Add remaining ingredients and cook for about 5 minutes, until carrots begin to soften

5. Pour into a large baking dish and cover with mashed potatoes

6. Bake at 400f for 15 minutes

7. Brown for 3-5 minutes until crushed potatoes start to turn golden on top

8. Addresh oregano and saffron on top to serve
