  • 4 bell peppers
  • 1.5 tbsp olive oil
  • 2 Espanola Gusta sausages finely chopped
  • 1 c chopped onion
  • 2 c cooked GoGo Quinoa
  • 1 tsp coriander powder
  • 1 tsp chili
  • 2 tbsp nutritional yeast
  • 1 cube vegetable broth
  • Original Gusta cheese, grated
  1. Follow the quinoa instructions on the package and make sure to mix the vegetable broth cube with the water 
  2. Pre-heat the oven at 375°
  3. Cut the bell peppers just below the stem & remove the seeds inside 
  4. Heat the oil in a non stick pan 
  5. Cook the onions for about 2min, until they become translucent
  6. Add the sausages and cook for another 2 min 
  7. Mix all ingredients together and fill the peppers 
  8. Place the peppers on parchment paper on a baking tray and cook for 25min at 375° (cook with the sliced stems on top of the stuffed peppers)
  9. Serve with hemp seeds & micro greens
