MEAL FOR 2 UDON TERIYAKI NOODLE STIR-FRY WITH VEGAN CHICKEN

Stovetop

Heat 30 ml (2 tbsp.) oil over medium-high heat.
Brown the vegan strips for 4 to 5 minutes, turning halfway through cooking.
Add vegetables if desired: onions, peppers, snow peas.
Reduce heat to medium-low.
Add udon noodles, stir gently and continue cooking for 2 minutes.
Mix the sauce with 125 ml (1/2 cup) boiling water until smooth.
Pour the sauce over the mixture.
Continue cooking for 2 minutes, stirring constantly.

Microwave

Mix the sauce with 125 ml (1/2 cup) water and heat for one minute at maximum power.
Stir until smooth and set aside.
Empty the noodle bag and vegan strips onto a plate and add 15 ml (1 tbsp) water.
Heat for 2 minutes at maximum power, top with sauce and serve.
