MEAL FOR 2 QUESADILLAS
WITH GROUND VEGETABLES

Stovetop

Preheat oven to 160C (320F)
Heat 30 ml (2 tbsp) oil in a skillet over medium-high heat.
Cook the protein mixture for 3 to 4 minutes, breaking it up.

Place 4 tortillas on an ovenproof baking sheet and top with veggie chop and shredded or thinly sliced cheddar cheese, then cover with a second tortilla.
Brown in the oven for 7 minutes, remove and rest for 1-2 minutes, top with salsa and serve.

Microwave

Divide protein mixture between 4 tortillas, top with shredded or thinly sliced cheddar cheese, then cover with a second tortilla.
Heat the quesadillas for 2 minutes on high.
Garnish with salsa and, if desired, lettuce, avocado or diced tomatoes.
