ENCHILADA SAUCE INGREDIENTS:
3 tbsp. chili powder
3 tbsp. flour
1 tsp. cocoa powder
1⁄2 tsp. garlic salt
1 tsp. oregano
3 cups water
1 (8 ounce) can tomato sauce
1- Combine all dry ingredients in a small bowl. Stirring constantly, slowly add enough of the water to make a thin paste.
2- Pour into saucepan and add rest of water. Cook over medium heat, stirring constantly, until mixture thickens. Stir in tomato sauce.
1 pkg Gusta ESPANOLA sausages
20-ounce enchilada sauce (see recipe above)
2 tablespoons chipotle sauce
1 Anaheim pepper, diced
1 15-ounce diced green chiles
2 teaspoons minced garlic
1½ teaspoons onion powder
1 teaspoon salt
1 teaspoon cumin
1 tbsp cold water + 2 tbsp corn starch
1 can black beans, drained and rinsed
4 burrito-sized flour tortillas
1 cup shredded Gusta ORIGINAL cheese
1- Sauté “sausages” in a large saucepan over medium heat until tender.
2- Add enchilada sauce and next 7 ingredients (through cumin) to the pan. Whisk together water and cornstarch in a small bowl, add to pan and stir. Reduce heat to a simmer, cover and cook for another 15 minutes.
3- Add black beans and a generous amount of “meat” mixture to the middle of each tortilla. Wrap up tightly and place seam-side-down in a greased baking dish. Top with additional sauce from the beef mixture and sprinkle shredded cheese on top. Bake at 400F for 10 minutes until cheese is bubbly and browned on top. Serve.
