Savoury crepes
  • 1tbsp ground chia seeds + 3 tbsp water
  • Coconut oil for cooking
  • 1 1/4 c cashew milk
  • 1c gogo quinoa crepe mix
  • 1/4 tsp sea salt
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/4 tsp dried thyme
  1. Mix chia and water and set aside
  2. Whisk everything in a bowl until you get a smooth batter
  3. Heat a drizzle of oil in a non stick skillet 
  4. Pour the crepe mixture evenly and cook over medium heat
  5. Cook for a few minutes until brown on both sides
 
Mushrooms
  • 1.5 tbsp olive oil
  • 2 c sliced porcini mushrooms
  1. Heat the oil in a skillet
  2. Cook mushrooms for 8-10 min until soft & brown
 
Mushroom cashew cream
  • 1/2c soaked cashews (soaked 2h or more)
  • 5 tbsp water
  • 1/4 c coconut cream (full cream cha’s organics)
  • Juice of 1/2 lemon
  • 1/2 tsp salt
  • 2 cloves garlic
  • 2 tbsp chopped onion
  • 1 capsule probiotics
  • 2 tbsp nutritional yeast
  • Steamed or stir fried asparagus
  • 1-2 diced Germaine Gusta sausage
  • Original flavour Gusta cheese
  • Fresh herbs (garnish)
  1. Mix everything except fresh herbs, Gusta sausages & cheese in high speed blender until smooth and set about 1/4 of the mixture aside to drizzle on top of the crepes
  2. Add Gusta sausages and simmer in a small pot for 5min
  3. Add mushrooms before serving with crepes & mix well
  4. Pour in the middle of the crepes, add the asparagus & grated Gusta cheese then fold the crepes in half
  5. Serve with fresh herbs & cashew cream
