Spice up the winter!

INGREDIENTS:

2 Tbsp. coconut oil

1 medium yellow onion, chopped

½ cup diced red bell pepper

½ cup chopped celery

½ cup frozen peas

1 cup of corn

3 cloves garlic, minced

1 (14.5 oz.) can diced tomatoes

1 Tbsp. of tomato paste

¼ tsp. thyme

¼ tsp. oregano

¼ tsp. cayenne

¼ tsp. onion powder

¼ tsp. black pepper

½ tsp. garlic powder

¾ tsp. smoked paprika

1 tsp. of chili flakes

½ teaspoon of molasses or maple syrup

½ teaspoon salt

Tabasco sauce to taste

Salt to taste

1 package of Espanola Gusta sausages

1 cup basmati rice

2 cups vegetable broth

1 bay leaf

 

INSTRUCTIONS

  1. Melt the coconut oil over a medium-high heat and sauté the onions and garlic first for about a minute then add bell peppers, corn, peas, celery and garlic for about 7 minutes.
  1. Next, pour in the can of tomatoes, tomato paste, all the spices (from thyme to molasses or maple syrup), salt, and hot sauce, if using. Stir to combine.
  1. Add the Gusta sausage, rice, broth, bay leaf and stir. Bring to a boil, reduce the heat to low and cover. Cook for 25 minutes or until the rice is tender without removing the lid if possible.
  1. Remove from heat and let it sit, covered, for 5 minutes. Serve immediately.

 

Makes 4-5 servings
