Ingredients
- 2 Tbsp. coconut oil
- 1 medium yellow onion, chopped
- ½ cup diced red bell pepper
- ½ cup chopped celery
- ½ cup frozen peas
- 1 cup of corn
- 3 cloves garlic, minced
- 1 (14.5 oz.) can diced tomatoes
- 1 Tbsp. of tomato paste
- ¼ tsp. thyme
- ¼ tsp. oregano
- ¼ tsp. cayenne
- ¼ tsp. onion powder
- ¼ tsp. black pepper
- ½ tsp. garlic powder
- ¾ tsp. smoked paprika
- 1 tsp. of chili flakes
- ½ teaspoon of molasses or maple syrup
- ½ teaspoon salt
- Tabasco sauce to taste
- Salt to taste
- 4 GUSTA Smoked Paprika sausages
- 1 cup basmati rice
- 2 cups vegetable broth
- 1 bay leaf
Prep
- Melt the coconut oil over a medium-high heat and sauté the onions and garlic first for about a minute then add bell peppers, corn, peas, celery and garlic for about 7 minutes.
- Next, pour in the can of tomatoes, tomato paste, all the spices (from thyme to molasses or maple syrup), salt, and hot sauce, if using. Stir to combine.
- Add the Gusta sausage, rice, broth, bay leaf and stir. Bring to a boil, reduce the heat to low and cover. Cook for 25 minutes or until the rice is tender without removing the lid if possible.
- Remove from heat and let it sit, covered, for 5 minutes. Serve immediately.
